In 2016, Henry Schwartz closed Elmhurst Dairy after 90 years as dairy consumption declined. The next year, he partnered with Dr. Cheryl Mitchell, who developed the HydroRelease™ milling process to create creamy, nutritious plant-based milks from grains, nuts, and seeds. Elmhurst relaunched as a plant-based company, offering simple, filler-free milks with more nuts, nutrition, and flavor in every glass.
